Description

Enjoy this delicious crispy air fryer chicken sandwich made with marinated chicken, flavorful seasonings, and optional fresh toppings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup pickle juice
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon powdered sweetener
  • 1 teaspoon cayenne pepper (Optional)
  • 1 egg (beaten)
  • cooking oil
  • 2 buns (brioche)
  • 4 slices dill pickle chips
  • 2 slices leaf lettuce (Optional)
  • 4 slices fresh tomatoes (Optional)
  • 1/4 cup mayo
  • 2 tablespoons honey
  • 2 teaspoons BBQ Sauce (hickory smoked)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon xanthan gum

Instructions

  1. Brine the chicken: Add the chicken breasts to a sealable bag or bowl with pickle juice and buttermilk. Refrigerate for 30 minutes.
  2. Prepare the dredging mixture: In a large bowl, mix flour, paprika, garlic powder, salt, pepper, and sweetener.
  3. Beat the egg in a separate bowl also large enough for dredging.
  4. Spray the air fryer basket with cooking oil.
  5. Remove chicken from marinade, dredge in beaten egg, then in the flour mixture. Place in air fryer basket.
  6. Spritz the top of the chicken with peanut oil from a distance.
  7. Air fry at 400 degrees for 15 minutes.
  8. Flip the chicken carefully using tongs and spritz again.
  9. Air fry for another 5-7 minutes until chicken is crisp and reaches an internal temperature of 165 degrees.
  10. Toast the buns for 3-4 minutes at 400 degrees.
  11. Assemble the sandwich with the chicken, dill pickles, lettuce, tomatoes, and sauce mixture.
  12. Combine mayo, honey, BBQ sauce, and mustard in a bowl. Optionally omit mayo if preferred.
  13. Add xanthan gum to a bowl with 2 teaspoons of the sauce, stir to thicken, and then mix with the remaining sauce.

Notes

  • Adjust salt and pepper to taste.
  • Substitute buttermilk with yogurt or milk mixed with lemon juice.
  • Each air fryer may cook differently, monitor carefully.
