Description

These crispy salmon bites tossed in a spicy, creamy bang bang sauce make for a delicious appetizer or snack.

Ingredients

Scale
  • 1 lb salmon, skinless and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 cup cornstarch
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar (optional)

Instructions

  1. Prep the Salmon: Start by patting the salmon dry with paper towels. This is key to getting that perfect crisp when cooked. Cut it into bite-sized pieces, about one inch each. Try to make them uniform so they cook evenly.
  2. Coat the Bites: In a medium bowl, mix the cornstarch, paprika, garlic powder, salt, and pepper. Toss the salmon pieces into the mixture until well coated. This light crust is what gives you that irresistible crunch when seared.
  3. Cook the Salmon: Heat olive oil in a skillet over medium-high heat. Once hot, add the salmon pieces in a single layer—don’t overcrowd the pan. Cook for about 2–3 minutes per side, or until golden brown and cooked through. Work in batches if needed.
  4. Make the Bang Bang Sauce: While the salmon is cooking, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a small bowl. Adjust the spice level to your liking—add more sriracha for extra heat or more honey to tone it down.
  5. Toss and Serve: Once the salmon bites are golden and crispy, gently toss them in the bang bang sauce until coated. Or serve the sauce on the side for dipping if you prefer them extra crispy. Garnish with chopped green onions or sesame seeds and enjoy immediately. They’re best served hot.

Notes

  • These salmon bites are best enjoyed fresh and hot.
  • Make sure to pat the salmon dry to ensure a crispy exterior.
  • You can adjust the sriracha quantity in the sauce to match your heat preference.
