- 1 cup cooked rice
- 1 cup black beans
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup corn
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt, pepper, and smoky spices. Grill until cooked through, then slice into strips.
- On a tortilla, layer rice, black beans, diced tomatoes, shredded lettuce, corn, and sliced chicken. Drizzle chipotle ranch dressing on top.
- Fold in the sides of the tortilla and roll it tightly from the bottom up.
- Serve immediately or grill the burrito for 1-2 minutes on each side for a crispy exterior.
