Description

A moist and flavorful coffee walnut loaf perfect for any occasion.

Ingredients

Scale
  • 225g all-purpose flour
  • 225g unsalted butter, softened
  • 225g granulated sugar
  • 4 large eggs
  • 2 tablespoons instant coffee granules (dissolved in 4 tablespoons hot water)
  • 100g walnuts, chopped
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Start by preheating your oven to 350°F (175°C). Grease and line a 2-pound loaf tin with baking paper.
  2. In a mixing bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In another large bowl, beat the softened butter and granulated sugar until the mixture is light and fluffy.
  4. Add the eggs one at a time into the butter-sugar mixture, beating well after each addition.
  5. Mix in the dissolved coffee and vanilla extract until evenly combined.
  6. Gradually fold the dry ingredients into the wet mixture, ensuring there are no lumps.
  7. Gently fold in the chopped walnuts to give your batter a delightful crunch.
  8. Carefully pour the batter into the prepared loaf tin, making sure it’s evenly distributed.
  9. Place in the preheated oven and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  10. Once baked, remove the loaf from the oven and allow it to cool in the tin for about 15-20 minutes before transferring to a wire rack to cool completely.

Notes

  • Store the loaf in an airtight container for up to 5 days.
