- 225g all-purpose flour
- 225g unsalted butter, softened
- 225g granulated sugar
- 4 large eggs
- 2 tablespoons instant coffee granules (dissolved in 4 tablespoons hot water)
- 100g walnuts, chopped
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Start by preheating your oven to 350°F (175°C). Grease and line a 2-pound loaf tin with baking paper.
- In a mixing bowl, sift together the flour, baking powder, and salt. Set aside.
- In another large bowl, beat the softened butter and granulated sugar until the mixture is light and fluffy.
- Add the eggs one at a time into the butter-sugar mixture, beating well after each addition.
- Mix in the dissolved coffee and vanilla extract until evenly combined.
- Gradually fold the dry ingredients into the wet mixture, ensuring there are no lumps.
- Gently fold in the chopped walnuts to give your batter a delightful crunch.
- Carefully pour the batter into the prepared loaf tin, making sure it’s evenly distributed.
- Place in the preheated oven and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the loaf from the oven and allow it to cool in the tin for about 15-20 minutes before transferring to a wire rack to cool completely.
