- 1 pound large sea scallops
- 1/2 pound spaghetti or linguine
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
- 1 lemon, cut into wedges
Instructions
- Prepare the Scallops: Pat the scallops dry with paper towels. Season both sides with salt and pepper.
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Sear the Scallops: In a large skillet, heat olive oil over medium-high heat. Add the scallops and sear for 2-3 minutes on each side until golden brown and cooked through. Remove from the skillet and keep warm.
- Make the Sauce: In the same skillet, reduce heat to medium and add butter. Once melted, add the minced garlic and sauté until fragrant, about 1 minute. Stir in the heavy cream, scraping any flavorful bits from the bottom of the pan. Add the Parmesan cheese and stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
- Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat in the creamy garlic sauce.
- Add Scallops: Place the seared scallops on top of the pasta. Sprinkle with fresh parsley.
- Serve: Serve the pasta with lemon wedges on the side for squeezing over the dish.

- Ensure scallops are thoroughly dried to achieve the best sear.
- If possible, use fresh garlic for a more intense flavor.
- Adjust the consistency of the sauce by adding a bit of pasta water if needed.
- For an extra touch, garnish with a sprinkle of red pepper flakes for some heat.
