  • A handful fresh basil, chopped
  • To taste salt and pepper
  • 1 teaspoon paprika
  • From 1 lemon, lemon juice
  • For garnish fresh parsley

Instructions

  1. Marinate the Chicken: In a shallow dish, combine olive oil, lemon juice, minced garlic, paprika, salt, and pepper. Add the chicken breasts to the mixture and coat well. Let marinate for at least 30 minutes.
  2. Cook the Pasta: Bring a large pot of salted water to boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside.
  3. Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until cooked through and the internal temperature reaches 165°F (75°C). Let rest for a few minutes, then slice into strips.
  4. Prepare the Sauce: In a large skillet, heat a tablespoon of olive oil over medium heat. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes. Stir in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese gradually, stirring until melted and the sauce thickens. Season with salt and pepper to taste.
  5. Combine: Add the cooked rigatoni to the skillet with the creamy sauce. Toss well to ensure the pasta is coated. Stir in the chopped fresh basil.
  6. Serve: Plate the creamy rigatoni and top with grilled chicken slices. Garnish with fresh parsley.
