Description
A delicious creamy rigatoni dish topped with grilled chicken, perfect for a family dinner.
Ingredients
Scale
- 400 grams rigatoni pasta
- 2 large chicken breasts, boneless and skinless
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- A handful fresh basil, chopped
- To taste salt and pepper
- 1 teaspoon paprika
- From 1 lemon, lemon juice
- For garnish fresh parsley
Instructions
- Marinate the Chicken: In a shallow dish, combine olive oil, lemon juice, minced garlic, paprika, salt, and pepper. Add the chicken breasts to the mixture and coat well. Let marinate for at least 30 minutes.
- Cook the Pasta: Bring a large pot of salted water to boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside.
- Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until cooked through and the internal temperature reaches 165°F (75°C). Let rest for a few minutes, then slice into strips.
- Prepare the Sauce: In a large skillet, heat a tablespoon of olive oil over medium heat. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes. Stir in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese gradually, stirring until melted and the sauce thickens. Season with salt and pepper to taste.
- Combine: Add the cooked rigatoni to the skillet with the creamy sauce. Toss well to ensure the pasta is coated. Stir in the chopped fresh basil.
- Serve: Plate the creamy rigatoni and top with grilled chicken slices. Garnish with fresh parsley.
Notes
- For extra flavor, add a dash of white wine to the sauce before simmering.
- Substitute basil with spinach or arugula for a different twist.
- Use freshly grated cheese for a smoother sauce. Pre-grated cheese may result in a grainy texture.
- Ensure the chicken rests after grilling to lock in juices, resulting in tender slices.
