Instructions
- Prepare the Batter: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. In another bowl, beat the eggs and add milk, melted butter, and vanilla extract. Mix well. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- Heat the Oil: In a deep frying pan or pot, heat vegetable oil to 350°F (175°C).
- Fry the Fritters: Using a spoon or small ice cream scoop, drop small amounts of batter into the hot oil. Fry fritters in batches for about 3-4 minutes, turning occasionally, until they are golden brown and cooked through. Remove fritters with a slotted spoon and drain on paper towels.
- Make the Honey Glaze: In a small saucepan over low heat, combine the honey and lemon juice. Stir until warm and smooth.
- Glaze the Fritters: Drizzle the warm honey glaze over the fritters. Dust with confectioners’ sugar.
