- 8 ounces dark chocolate, chopped
- 1 cup heavy cream
- 1 teaspoon vanilla extract (optional for ganache)
- Whipped cream or sea salt flakes (optional for serving)
Instructions
- Prepare the Crust:
Preheat the oven to 350°F (175°C). In a food processor, combine flour, cocoa powder, powdered sugar, and salt. Pulse to mix. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs. Add the egg yolk and pulse until the dough begins to come together. Press the dough evenly into a tart pan with a removable bottom. Prick the bottom with a fork. Bake for 15 minutes. Let cool completely. - Make the Caramel Filling:
In a saucepan over medium heat, melt sugar until it turns a deep amber color, swirling occasionally. Remove from heat and carefully stir in the butter until melted. Slowly add the cream, stirring constantly. Return to medium heat and simmer for 2 minutes until thickened. Stir in sea salt and let cool slightly. Pour caramel over the cooled crust, smoothing the top. - Prepare the Chocolate Ganache:
Place chopped chocolate in a heatproof bowl. In a saucepan, heat cream until it just starts to simmer. Pour over chocolate and let sit for 2 minutes. Stir until smooth, adding vanilla extract if desired. Pour ganache over the caramel layer, smoothing the top. - Let Set:
Refrigerate the tart for at least 2 hours or until the ganache is firm.

- Ensure the caramel is not too hot when pouring over the crust to avoid cracking it.
- For a smoother ganache, ensure all chocolate pieces are finely chopped before adding the hot cream.
- Serve with a sprinkle of sea salt flakes or a dollop of whipped cream to enhance the flavors.
