Description
A quick and flavorful shrimp stir-fry served over fluffy rice with colorful bell peppers.
Ingredients

- 1 lb fresh shrimp, peeled and deveined
- 1 cup jasmine or basmati rice
- 1 cup mixed bell peppers, chopped (red, yellow, green)
- 3 green onions, sliced
- 2 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp fresh lime juice
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Rinse the rice under cold water until clear. Cook according to package instructions.
- While the rice cooks, chop the bell peppers and slice the green onions.
- In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
- Add shrimp to the skillet; season with salt and pepper. Cook for about 3 minutes per side until pink and opaque.
- Stir in chopped bell peppers; cook for an additional 2 minutes until slightly tender.
- Mix soy sauce and lime juice in a bowl; pour over shrimp and veggies. Simmer for 2 minutes.
- Serve over rice and garnish with green onions.
Notes
- This dish is great for using up leftover vegetables.
- Adjust the seasoning and lime juice according to your taste.
- For extra heat, consider adding red pepper flakes.
