- 200 grams fresh salmon (sushi grade)
- 2 cups sushi rice, cooked
- 4–6 sheets nori
- 1 avocado, sliced
- 1 cucumber, julienned
- 1 tablespoon black and white sesame seeds
- 2 tablespoons chopped chives or green onions
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 tablespoons mayonnaise (optional)

- for serving wasabi
- for serving pickled ginger
Instructions
- Prepare the Sushi Rice:
- Cook sushi rice according to the package instructions.
- Mix rice vinegar, sugar, and salt in a small bowl until dissolved.
- Once rice is cooked, fold in the vinegar mixture gently with a wooden spatula.
- Let the rice cool to room temperature.
- Prepare the Salmon:
- Slice the sushi-grade salmon into small cubes or thin strips.
- Prepare the Vegetables:
- Slice the avocado and cucumber into thin strips or julienne.
- Assemble the Hand Rolls:
- Cut nori sheets in half to make smaller squares.
- Lay the nori shiny side down and place a small amount of rice in the top left corner.
- Spread it out gently, leaving space at the edges.
- Layer a few pieces of salmon, avocado, and cucumber on top of the rice.
- Optionally, you can add a small amount of mayonnaise for creaminess.
- Sprinkle with sesame seeds and chopped chives or green onions.
- Roll the Hand Rolls:
- Starting from the rice-topped corner, roll the nori into a cone shape.
- Use a few grains of rice to seal the edge of the nori.

- Keep a bowl of water handy to wet your fingers while handling the rice to prevent sticking.
