  • 2 cups sushi rice, cooked
  • 46 sheets nori
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 tablespoon black and white sesame seeds
  • 2 tablespoons chopped chives or green onions
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons mayonnaise (optional)

  • for serving pickled ginger

Instructions

  1. Prepare the Sushi Rice:
    • Cook sushi rice according to the package instructions.
    • Mix rice vinegar, sugar, and salt in a small bowl until dissolved.
    • Once rice is cooked, fold in the vinegar mixture gently with a wooden spatula.
    • Let the rice cool to room temperature.
  2. Prepare the Salmon:
    • Slice the sushi-grade salmon into small cubes or thin strips.
  3. Prepare the Vegetables:
    • Slice the avocado and cucumber into thin strips or julienne.
  4. Assemble the Hand Rolls:
    • Cut nori sheets in half to make smaller squares.
    • Lay the nori shiny side down and place a small amount of rice in the top left corner.
    • Spread it out gently, leaving space at the edges.
    • Layer a few pieces of salmon, avocado, and cucumber on top of the rice.
    • Optionally, you can add a small amount of mayonnaise for creaminess.
    • Sprinkle with sesame seeds and chopped chives or green onions.
  5. Roll the Hand Rolls:
    • Starting from the rice-topped corner, roll the nori into a cone shape.
    • Use a few grains of rice to seal the edge of the nori.
