- 2–3 teaspoons oregano (dry, kind that makes everything taste authentically Greek)
- 1–2 tablespoons lemon juice (fresh to give that bright zing)
- 3 cloves allspice (optional but add a cozy, warm note if you’re feelin’ adventurous)
- 2 cloves garlic (quartered, gotta have garlic for that punch)
- 1/2 teaspoon salt (just to bring all those flavors together)

Instructions
- Toss potato wedges with olive oil, oregano, lemon juice, garlic, salt, and pepper in a big bowl, ensuring each wedge is well coated.
- Transfer coated potatoes into the pressure cooker, spread them out evenly and lock the lid.
- Bring up to pressure, slow release for about 8 minutes.
- Once naturally released, open lid, spread potatoes on a baking sheet, roast at 400°F for 30 minutes, turning halfway.
- Serve with a drizzle of lemon juice if desired.
