Instructions
- Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined. In a separate bowl, whisk together the flour, baking powder, black cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. If desired, add black gel food coloring to intensify the color.
- Chill the Dough: Wrap the dough in plastic wrap. Chill in the refrigerator for at least 1 hour to make it easier to handle.
- Prepare the Filling: In a medium bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy. Refrigerate the filling for about 30 minutes to firm up.
- Shape the Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Take a tablespoon of dough and flatten it into a disk. Place a small amount of cream cheese filling in the center and fold the dough around it, rolling into a ball. Repeat with the remaining dough and filling.
- Bake the Cookies: Place the cookies onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, until the edges are set. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
