Instructions

  1. Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined. In a separate bowl, whisk together the flour, baking powder, black cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. If desired, add black gel food coloring to intensify the color.
  2. Chill the Dough: Wrap the dough in plastic wrap. Chill in the refrigerator for at least 1 hour to make it easier to handle.
  3. Prepare the Filling: In a medium bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy. Refrigerate the filling for about 30 minutes to firm up.
  4. Shape the Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Take a tablespoon of dough and flatten it into a disk. Place a small amount of cream cheese filling in the center and fold the dough around it, rolling into a ball. Repeat with the remaining dough and filling.
