A delicious combination of chicken and cauliflower baked with a spicy buffalo sauce and creamy cheese.

- 4 boneless, skinless chicken breasts
- 4 cups cauliflower florets
- 1 cup buffalo sauce
- 8 oz cream cheese
- 1 cup shredded sharp cheddar cheese
- 3 green onions, sliced
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Toss cauliflower florets in olive oil, salt, and pepper; roast for about 15 minutes until tender.
- In a skillet, season and cook chicken breasts over medium heat for 6-8 minutes per side until fully cooked. Shred using two forks.
- In a bowl, mix shredded chicken with buffalo sauce and cream cheese; stir in half of the cheddar cheese.
- Combine roasted cauliflower with the chicken mixture; transfer to the baking dish.
- Top with remaining cheddar cheese and green onions; bake for an additional 15-20 minutes until golden brown.
Notes
- This recipe can be made with leftover chicken as well.
- For added crunch, you can top with crushed tortilla chips before baking.
