Description

A delicious combination of chicken and cauliflower baked with a spicy buffalo sauce and creamy cheese.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 cups cauliflower florets
  • 1 cup buffalo sauce
  • 8 oz cream cheese
  • 1 cup shredded sharp cheddar cheese
  • 3 green onions, sliced
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Toss cauliflower florets in olive oil, salt, and pepper; roast for about 15 minutes until tender.
  3. In a skillet, season and cook chicken breasts over medium heat for 6-8 minutes per side until fully cooked. Shred using two forks.
  4. In a bowl, mix shredded chicken with buffalo sauce and cream cheese; stir in half of the cheddar cheese.
  5. Combine roasted cauliflower with the chicken mixture; transfer to the baking dish.
  6. Top with remaining cheddar cheese and green onions; bake for an additional 15-20 minutes until golden brown.

Notes

  • This recipe can be made with leftover chicken as well.
  • For added crunch, you can top with crushed tortilla chips before baking.
