- 2 large sweet potatoes
- 1 cup full-fat coconut milk
- 2 tsp curry powder
- 2 tbsp butter or coconut oil
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
Instructions
- Peel and chop the sweet potatoes into even chunks.
- Place them in a pot of cold water and bring to a boil over medium-high heat.
- Reduce heat and simmer for 15-20 minutes until fork-tender. Drain well.
- Return warm sweet potatoes to the pot.
- Add melted butter (or coconut oil), coconut milk, curry powder, salt, and pepper.
- Mash until creamy, adjusting coconut milk as desired for consistency.
- Taste and adjust seasoning if needed.
- Serve warm, garnished with fresh herbs if desired.
