Description

Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 cup sun-dried tomatoes (packed in oil, chopped)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 8 oz fettuccine or penne pasta
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Prepare all ingredients by chopping the garlic and sun-dried tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and sauté garlic for about one minute until fragrant.
  3. Pour in heavy cream while scraping up any browned bits from the pan.
  4. When the sauce begins to bubble, add fresh spinach and stir until wilted. Mix in Parmesan cheese until melted.
  5. Cook pasta according to package instructions until al dente; drain and combine with the creamy sauce mixture. Slice chicken into strips on top.
  6. Serve generously plated with optional extra Parmesan or a drizzle of olive oil.
