Description
This creamy chicken pasta dish is packed with flavor from sun-dried tomatoes and fresh spinach.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- 1 cup sun-dried tomatoes (packed in oil, chopped)
- 1 cup heavy cream
- 2 cups fresh spinach
- 8 oz fettuccine or penne pasta
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Prepare all ingredients by chopping the garlic and sun-dried tomatoes.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook for 6-7 minutes per side until golden brown and cooked through.
- Remove from skillet and sauté garlic for about one minute until fragrant.
- Pour in heavy cream while scraping up any browned bits from the pan.
- When the sauce begins to bubble, add fresh spinach and stir until wilted. Mix in Parmesan cheese until melted.
- Cook pasta according to package instructions until al dente; drain and combine with the creamy sauce mixture.
- Slice chicken into strips on top.
- Serve generously plated with optional extra Parmesan or a drizzle of olive oil.
Notes
- This dish can be served with a side salad for a complete meal.
- Feel free to substitute other types of pasta if preferred.
