- 1 cup almond flour
- 1 ¾ cups powdered sugar
- 3 large egg whites (room temp)
- ¼ cup granulated sugar
- ½ tsp vanilla extract
- Red gel food coloring (optional)
- Crushed candy canes or sprinkles (for decoration)
- ½ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp heavy cream
- ½ cup crushed Little Debbie Christmas Tree Cakes (or 1 cake)
- Red and green gel food coloring (optional for swirl effect)
- Turquoise sanding sugar
- Mini sugar pearls and holiday sprinkles
- Crushed peppermint or red sugar crystals
Instructions
- Sift almond flour and powdered sugar together.
- Beat egg whites until foamy, then gradually add granulated sugar and vanilla. Beat until stiff peaks form.
- Gently fold the dry mix into the egg whites until batter flows like lava. Add red gel coloring if desired.
- Pipe 1 circles onto a lined baking sheet and tap the tray to remove air bubbles.
- Let shells rest at room temp 30–45 minutes (until tops are no longer tacky).
- Bake at 300°F (150°C) for 14–16 minutes. Let cool completely.
- Beat butter until fluffy, then add powdered sugar, vanilla, and cream. Mix in crushed Christmas Tree Cakes until smooth.
- Divide and color part of the frosting red or green for a swirled effect.
- Pipe filling onto one macaron shell, sandwich with another.
- Top with sanding sugar, mini pearls, and crushed peppermint.
