Description

Ingredients

  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 2 fresh jalapenos, finely chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 4 green onions, chopped
  • 1/2 cup mayonnaise
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
  2. Bake on a parchment-lined tray for 25–30 minutes until cooked through.
  3. Shred the chicken using two forks once cooled slightly.
  4. In a large bowl, mix cream cheese, mayonnaise, and lemon juice until smooth.
  5. Fold in the shredded chicken, jalapenos, cheddar cheese, and green onions.
  6. Taste and adjust seasoning as needed.
  7. Cover and refrigerate for at least 30 minutes before serving.
