- 4 salmon fillets (6 oz each)
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh parsley, chopped

Instructions
- Prepare ingredients: Chop garlic and sun-dried tomatoes.
- Season salmon: Pat dry and season both sides with salt and pepper.
- Heat pan: In a large skillet, heat olive oil over medium-high heat until shimmering.
- Sear salmon: Place salmon skin-side down in the skillet; cook for 6 minutes without moving. Flip and cook for an additional 3 minutes until cooked through.
- Make sauce: Remove salmon; add garlic to the skillet and sauté until fragrant. Stir in sun-dried tomatoes and heavy cream, simmering for about 3 minutes.
- Combine: Return the salmon to the skillet, spoon sauce over it, and simmer for another minute before serving.

- This dish can be served over pasta or rice for a complete meal.
- Substitute fresh herbs for dried if necessary.
