Description

This creamy garlic salmon with sun-dried tomatoes is a delicious and easy dish perfect for any night of the week.


Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare ingredients: Chop garlic and sun-dried tomatoes.
  2. Season salmon: Pat dry and season both sides with salt and pepper.
  3. Heat pan: In a large skillet, heat olive oil over medium-high heat until shimmering.
  4. Sear salmon: Place salmon skin-side down in the skillet; cook for 6 minutes without moving. Flip and cook for an additional 3 minutes until cooked through.
  5. Make sauce: Remove salmon; add garlic to the skillet and sauté until fragrant. Stir in sun-dried tomatoes and heavy cream, simmering for about 3 minutes.
  6. Combine: Return the salmon to the skillet, spoon sauce over it, and simmer for another minute before serving.
