Description

This decadent chocolate ricotta cake features a rich chocolate base layered with a creamy ricotta mixture and topped with a fluffy chocolate pudding.

  • 1 box chocolate cake mix (plus ingredients listed on box: eggs, oil, water)
  • 2 lbs ricotta cheese
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 (5 oz) box instant chocolate pudding mix
  • 1 ½ cups cold milk
  • 8 oz whipped topping (like Cool Whip)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan thoroughly.
  2. Prepare the chocolate cake batter according to the package instructions (usually mixing eggs, oil, and water with the cake mix). Pour the batter into the prepared pan and spread it out evenly.
  3. In a large mixing bowl, combine the ricotta cheese, eggs, granulated sugar, and vanilla extract. Whisk or beat until smooth and creamy.
  4. Gently spoon the ricotta mixture over the chocolate batter. Don’t stir. It will look like it’s sitting right on top (and it is), but during baking, the layers will reverse—like magic.
  5. Bake the cake for 1 hour, or until the top is set and a toothpick inserted in the center comes out mostly clean. Remove from the oven and let it cool completely at room temperature.
  6. In a medium bowl, whisk together the instant chocolate pudding mix with cold milk until it thickens (about 2 minutes). Fold in the whipped topping gently until fully combined and fluffy.
  7. Once the cake has cooled, spread the pudding topping evenly over the surface. Cover and refrigerate the cake for at least 4 hours, or preferably overnight. This helps the layers set and the flavors blend beautifully.
