  • 2 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 2 cups baby spinach
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon gochujang (Korean chili paste)
  • 2 green onions, sliced
  • Toasted sesame seeds, for garnish

Instructions

  1. Cook the Noodles: Begin by cooking your rice noodles or ramen according to the package instructions. Drain and set aside. If you’re using rice noodles, rinse them in cold water to prevent sticking.
  2. Marinate the Beef: While the noodles cook, place your thinly sliced beef in a bowl with 1 tablespoon of soy sauce and a dash of sesame oil. Toss to coat and let it marinate for 10 minutes.
  3. Sauté the Aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the onions and sauté until translucent, about 2-3 minutes. Add garlic and ginger, stirring until fragrant.
  4. Cook the Beef: Add the marinated beef to the pan and cook until it’s browned and just cooked through, around 4–5 minutes.
  5. Stir-Fry the Vegetables: Add carrots and bell peppers to the pan and cook for 2–3 minutes until they’re slightly tender but still crisp. Toss in the baby spinach and stir until wilted.
  6. Combine and Sauce: Reduce the heat to medium. Return the noodles to the skillet, then pour in soy sauce, oyster sauce, brown sugar, and gochujang. Toss everything well until the sauce evenly coats the noodles, vegetables, and beef.
  7. Garnish and Serve: Top with sliced green onions and toasted sesame seeds. Serve hot and enjoy every cozy, flavorful bite.
