Description

Delicious taco bowls featuring seasoned ground beef and crispy roasted potatoes topped with fresh pico de gallo and sriracha mayo.


Ingredients

  • 1 lb ground beef (lean)
  • ½ tsp Creole seasoning (adjust to taste)
  • ½ tsp cumin
  • ¼ tsp ground coriander
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp crushed red pepper
  • 1 tbsp taco seasoning (or to taste)
  • 56 medium-large Yukon Gold potatoes (diced)
  • 1 tbsp olive oil (for roasting)
  • salt (to taste)
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 large tomato (diced)
  • 1 jalapeño (diced)
  • ½ red onion (diced)
  • ½ lime (juiced)
  • 1 tbsp cilantro (chopped)
  • ½ cup mayonnaise
  • 2 tbsp sriracha (adjust to taste)
  • ¼ tbsp lemon juice
  • 1 tsp black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix diced potatoes with olive oil, salt, oregano, garlic powder, and smoked paprika until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet and roast for 25-30 minutes, or until crispy and golden brown.
  4. While the potatoes are roasting, heat a skillet over medium heat and add ground beef.
  5. Season the beef with Creole seasoning, cumin, ground coriander, onion powder, garlic powder, crushed red pepper, and taco seasoning. Cook until browned, about 8-10 minutes.
  6. In a separate bowl, combine diced tomato, jalapeño, red onion, lime juice, and chopped cilantro to make pico de gallo. Season with salt and pepper to taste.
  7. For the sriracha mayo, mix mayonnaise, sriracha, lemon juice, and black pepper in a small bowl until smooth.
  8. Assemble the taco bowls by layering crispy potatoes, seasoned beef, pico de gallo, and a drizzle of sriracha mayo.
