- 200g white chocolate chips
- 1 teaspoon pumpkin spice mix
- 1/2 teaspoon vanilla extract
- 1/4 cup graham cracker crumbs
- 1/4 cup granulated sugar
- Mini chocolate chips (for decoration)
- Pinch of salt
Instructions
- Melt the Chocolate: In a microwave-safe bowl or using a double boiler, melt the white chocolate chips until smooth. Stir frequently to prevent burning.
- Mix Ingredients: In a large bowl, combine the pumpkin puree, melted white chocolate, pumpkin spice mix, vanilla extract, and salt. Mix until fully combined.
- Chill the Mixture: Refrigerate the mixture for about an hour, or until it is firm enough to handle.
- Form the Truffles: Once the mixture is chilled, scoop out small portions and roll them into balls. Place on a parchment-lined baking sheet.
- Coat with Sugar: Roll each truffle ball in the graham cracker crumbs followed by the granulated sugar to coat.
- Add the Chocolate Chips: Place a mini chocolate chip on top of each truffle for decoration.
- Shape the Truffles: Use a toothpick or skewer to gently press lines into the sides of each truffle, creating a pumpkin-like appearance.
- Final Chill: Refrigerate the truffles for another 30 minutes to set.

- For an extra hint of spice, add a pinch of cinnamon or nutmeg to the mixture.
