Ingredients

  • 1/4 cup graham cracker crumbs

  • Mini chocolate chips (for decoration)
  • Pinch of salt

Instructions

  1. Melt the Chocolate: In a microwave-safe bowl or using a double boiler, melt the white chocolate chips until smooth. Stir frequently to prevent burning.
  2. Mix Ingredients: In a large bowl, combine the pumpkin puree, melted white chocolate, pumpkin spice mix, vanilla extract, and salt. Mix until fully combined.
  3. Chill the Mixture: Refrigerate the mixture for about an hour, or until it is firm enough to handle.
  4. Form the Truffles: Once the mixture is chilled, scoop out small portions and roll them into balls. Place on a parchment-lined baking sheet.
  5. Coat with Sugar: Roll each truffle ball in the graham cracker crumbs followed by the granulated sugar to coat.
  6. Add the Chocolate Chips: Place a mini chocolate chip on top of each truffle for decoration.
  7. Shape the Truffles: Use a toothpick or skewer to gently press lines into the sides of each truffle, creating a pumpkin-like appearance.
  8. Final Chill: Refrigerate the truffles for another 30 minutes to set.
