Delicious and easy overnight chocolate mint oats, perfect for breakfast or a snack.
Ingredients

- 1 cup rolled oats
- 2 teaspoons chia seeds
- 2 tablespoons raw cacao powder or unsweetened cocoa powder
- 1 cup milk of choice
- ¼ cup + 2 tablespoons coconut cream or non-dairy vanilla yogurt
- 1 teaspoon pure vanilla extract
- ½ teaspoon organic peppermint extract
- 4–8 teaspoons pure maple syrup
- 1–2 tablespoons mini chocolate chips
- Mint leaves
- Fresh fruit
- Coconut whip
Instructions
- Set aside 2-3 resealable jars.
- Add all ingredients to a large mixing bowl and whisk until well mixed and no clumps of coconut cream or yogurt remain. Pour into jars.
- Seal jars.
- Store overnight in the refrigerator for up to 5 days. Overnight oats will become thicker as each day passes. If desired, add non-dairy milk to thin it out. Enjoy cold, or heat in the microwave in 20-second increments until warm.
