Description

Deliciously chewy butterscotch oatmeal cookies, perfect for any occasion.


Ingredients

Scale
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups old fashioned oats
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a medium bowl add the flour, baking powder, baking soda and salt and whisk together.
  3. In a large bowl add the softened butter, granulated sugar and brown sugar and using a hand mixer beat on medium until creamy.
  4. Add in the egg and vanilla and mix.
  5. Add in the dry ingredients and mix just until combined.
  6. Mix in the old fashioned oats just until combined.
  7. Using a wooden spoon or spatula fold in the butterscotch chips.
  8. Scoop 2 tablespoons of cookie dough and gently roll into balls or use a cookie scoop. Place a few extra butterscotch chips on top.
  9. Bake for 8-10 minutes.

Notes

  • Store cookies in an airtight container for up to a week.
  • For chewier cookies, slightly underbake them.
