Description

A delicious apple cinnamon brioche bake, perfect for breakfast or brunch!


Ingredients

  • 3 tablespoons unsalted butter
  • 3 large apples, peeled and diced
  • 2 tablespoons brown sugar
  • 1 ½ teaspoons ground cinnamon, divided
  • 1 (16-ounce) loaf brioche bread, cubed
  • 1 (8-ounce) package cream cheese, cubed
  • 12 large eggs, beaten
  • 2 cups whole milk
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • ½ cup chopped pecans
  • 1 tablespoon confectioners’ sugar

Instructions

  1. Melt the butter in a large cast iron skillet over medium heat. Add the peeled and diced apples, cooking and stirring often until they are just tender, about 5 minutes.
  2. Stir in the brown sugar and 1 teaspoon of ground cinnamon, continuing to cook until the sugar dissolves and the apples coat with a cinnamon glaze, about 1-2 minutes. Remove from heat and let cool completely.
  3. Lightly coat a 9×13-inch baking dish with nonstick spray. Layer half of the cubed brioche bread evenly in the bottom of the dish. Distribute the cubed cream cheese over the bread, then spread half of the cooled apple mixture on top. Add the remaining bread cubes followed by the rest of the apple mixture in an even layer.
  4. In a large bowl or glass measuring cup, whisk together the beaten eggs, whole milk, maple syrup, vanilla extract, kosher salt, and the remaining ½ teaspoon of ground cinnamon. Pour this custard mixture evenly over the layered bread and apples.
  5. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 2 hours or overnight to allow the bread to soak and flavors to meld.
  6. When ready to bake, preheat your oven to 350°F (175°C). Remove the baking dish from the refrigerator and let it stand at room temperature for 30 minutes before baking to ensure even cooking.
  7. Sprinkle the chopped pecans evenly over the top of the casserole. Cover the baking dish with foil and bake for 30 minutes to set the custard. Remove the foil and continue baking uncovered for an additional 25-30 minutes, or until the top is golden brown and the center is firm to the touch.
  8. Remove from the oven and let it cool slightly. Serve warm, dusted with confectioners’ sugar for a touch of sweetness and presentation.
