Instructions

- Prepare the Cake Batter: In a bowl, mix the flour, baking powder, and salt. Set aside. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the vanilla extract and mix well. Alternate adding the flour mixture and milk, beginning and ending with the flour mixture. Mix until just combined.
- Color and Bake: Divide the batter into two equal parts. Color one portion pink and the other portion blue with food coloring. Pour each colored batter into the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the centers comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Make the Meringue: In a clean, dry bowl, whisk the egg whites and cream of tartar until soft peaks form. Gradually add the powdered sugar, continuing to beat until stiff, glossy peaks form. Divide the meringue into three portions. Tint one portion pink and another blue, leaving the third portion white.
- Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of white meringue over the top. Add the second cake layer. Spread a thin layer of blue meringue followed by a thicker layer of pink meringue on top.
- Decorate: Pipe dollops of the remaining meringue on top, alternating colors for a whimsical effect. Sprinkle with colorful sprinkles for extra flair.
