Deliciously soft and chewy pecan cookies, perfect for any occasion.

- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups chopped pecans, toasted
- Extra granulated sugar for sprinkling
Instructions
- In a large mixing bowl, cream the softened butter until smooth. Add granulated and powdered sugar and beat until light and fluffy, about 2–3 minutes.
- Mix in vanilla extract until just combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the butter mixture, mixing on low.
- Fold in the toasted chopped pecans gently.
- Cover the dough and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop dough into balls, place on sheet, and flatten slightly. Sprinkle tops with sugar.
- Bake 12–15 minutes until edges are lightly golden.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- Make sure butter is at room temperature for easier mixing.
- Chilling the dough will help the cookies hold their shape while baking.
