Description

Delicious pecan sandies are buttery cookies rolled in powdered sugar, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter (at room temperature)
  • 1/4 cup + 1 tablespoon confectioners sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 cup + 2 tablespoons all purpose flour
  • 1/2 cup finely chopped toasted pecans
  • 1/2 cup additional confectioners sugar (for coating)

Instructions

  1. Preheat the oven to 350F. Line a baking sheet with parchment paper.
  2. Add butter, ¼ cup plus 1 tablespoon confectioners sugar, vanilla and salt into a large bowl. Beat with an electric beater for about 3 minutes or until light and fluffy.
  3. Add the flour and chopped pecans. Mix until combined.
  4. Roll about 1 tablespoon of measured dough into a smooth ball and place on the prepared baking sheet, spacing about an inch apart.
  5. Bake cookies until deep golden brown on the bottoms, about 15 to 18 minutes. Place baking pan on a wire rack and cool for 5 minutes.
  6. Place the remaining 1/2 cup powdered sugar in a medium bowl. Working in batches, roll the warm cookies in the sugar, shaking off excess, and place them on a wire rack. Cool completely. Reroll cooled cookies in confectioners’ sugar again.
