  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 cup heavy cream for whipping (optional, for topping)
  • Fresh cherries and pistachios for garnish
  • Powdered sugar for dusting

Instructions

  1. Pistachio Layer: Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. In a mixing bowl, combine ground pistachios, flour, and salt. In another bowl, beat butter and sugar until creamy. Add eggs one at a time, mixing well. Stir in vanilla extract, then gradually add the pistachio mixture. Pour into prepared pan and bake for 20-25 minutes. Cool completely.
  2. Cherry Layer: In a saucepan, combine cherries, sugar, lemon juice, and cornstarch. Cook over medium heat until thickened, stirring occasionally. Cool.
  3. Vanilla Layer: Preheat the oven to 350°F (175°C). Grease and flour another 9-inch round cake pan. In a bowl, mix flour, baking powder, and salt. In another bowl, cream butter and sugar. Add eggs one at a time, mixing. Add vanilla extract. Alternate adding flour mixture and milk, starting and ending with flour. Pour into pan and bake for 25-30 minutes. Cool completely.
  4. Assembly: Place pistachio layer on a serving plate. Spread half of the cherry mixture on top. Add vanilla layer, then the remaining cherry mixture. Optional: Whip cream and spread on top. Garnish with fresh cherries, pistachios, and a dusting of powdered sugar.
