- 3–4 boneless, skinless chicken breasts
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 4 cups low-sodium chicken broth
- Juice and zest of 1 lemon
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onions, carrots, and celery until softened (about 5 minutes).
- Add minced garlic; cook for an additional minute until fragrant.
- Stir in chicken breasts and chicken broth; bring to a gentle boil.
- Add rice, thyme, oregano, salt, pepper, lemon juice, and zest. Reduce heat to low; simmer for about 15 minutes until rice is tender.
- Remove cooked chicken; shred with forks and return to the pot. Stir well before serving hot.
