Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 4 cups low-sodium chicken broth
  • Juice and zest of 1 lemon
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, carrots, and celery until softened (about 5 minutes).
  2. Add minced garlic; cook for an additional minute until fragrant.
  3. Stir in chicken breasts and chicken broth; bring to a gentle boil.
  4. Add rice, thyme, oregano, salt, pepper, lemon juice, and zest. Reduce heat to low; simmer for about 15 minutes until rice is tender.
  5. Remove cooked chicken; shred with forks and return to the pot. Stir well before serving hot.
