Corned Beef Casserole

Description

A hearty corned beef casserole that combines rye bread, sauerkraut, and Swiss cheese.


Ingredients

  • 8 cups rye bread (cubed)
  • ¼ cup butter (melted)
  • 8 ounces corned beef (diced, divided)
  • ¾ cup thousand island dressing (divided)
  • 1 cup sauerkraut (well drained)
  • 2 cups shredded swiss cheese (divided)
  • ½ cup pickles (chopped)

Instructions

  1. Preheat oven to 400℉. Grease a 9×13-inch baking dish.
  2. In a large bowl, toss bread cubes with melted butter. Spread half of the cubes into the baking dish.
  3. Layer the following: 4 ounce corned beef (about 1 cup), ½ cup thousand island dressing, sauerkraut, 1 cup Swiss cheese, remaining corned beef. Top with the remaining bread cubes.
  4. Cover with foil and bake for 25 minutes. Uncover and spread remaining cheese over top. Bake an additional 10 minutes or until cheese is melted and casserole is heated through.
  5. Top with remaining dressing and chopped pickles when serving.

Notes

  • This casserole can be prepared the day before and baked just before serving.
  • Adjust the amount of mayonnaise in the dressing to taste.
