This sheet pan gnocchi recipe is a quick and easy dinner option, bringing together gnocchi, smoked sausages, and fresh vegetables, all roasted together for maximum flavor.

- 1 bag shelf-stable gnocchi (uncooked)
- 1/2 yellow onion (thinly sliced)
- 2 cups bell peppers (thin strips)
- 2 zucchini (chopped)
- 4 smoked sausages (sliced)
- 3 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp black pepper (or to taste)
- Grated parmesan (optional)
Instructions
- Preheat oven to 425°F and line a rimmed baking sheet with parchment paper.
- Add 1 bag uncooked gnocchi, 1/2 sliced onion, 2 cups sliced bell peppers, and 2 chopped zucchini to the sheet pan.
- Add 4 sliced smoked sausages and spread everything into an even layer.
- Drizzle with 3 Tbsp olive oil, then sprinkle 1 Tbsp Italian seasoning, 1 tsp salt, and 1 tsp black pepper. Toss to coat.
- Roast for 25 minutes, stirring halfway through to brown evenly.
- Top with grated parmesan and serve warm.
Notes
- Feel free to substitute any of the vegetables with your favorites.
- For a spicier dish, consider adding red pepper flakes.
