Description

A flavorful Cajun shrimp and rice dish with chicken sausage, perfect for a hearty meal.


Ingredients

  • 1 cup long-grain rice
  • 1 pound shrimp, peeled and deveined
  • 1 pound chicken sausage (or turkey sausage)
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 23 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon black pepper
  • to taste salt
  • 1 tablespoon olive oil
  • for garnish Fresh parsley

Instructions

  1. Start by peeling and deveining your shrimp if you haven’t already, and dice the onion and bell pepper.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5 minutes. Remove and set aside.
  3. In the same skillet, add the onion, bell pepper, and garlic. Sauté until softened, approximately 3-4 minutes.
  4. Stir in the rice, coating it in the vegetable mixture. Pour in the chicken broth followed by the Cajun seasoning, black pepper, and salt. Bring everything to a gentle boil before reducing the heat to low.
  5. Once the rice is simmering, add the shrimp and the cooked sausage back to the skillet. Cover and cook for about 15-20 minutes, or until the rice is tender and has absorbed the liquid.
  6. Remove from heat and let it sit for a few minutes. Fluff the rice with a fork and garnish with fresh parsley if desired. Serve hot!
