- 1 cup long-grain rice
- 1 pound shrimp, peeled and deveined
- 1 pound chicken sausage (or turkey sausage)
- 1 medium onion, diced
- 1 medium bell pepper, diced
- 2–3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon Cajun seasoning
- 1 teaspoon black pepper
- to taste salt
- 1 tablespoon olive oil
- for garnish Fresh parsley
Instructions
- Start by peeling and deveining your shrimp if you haven’t already, and dice the onion and bell pepper.
- In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, add the onion, bell pepper, and garlic. Sauté until softened, approximately 3-4 minutes.
- Stir in the rice, coating it in the vegetable mixture. Pour in the chicken broth followed by the Cajun seasoning, black pepper, and salt. Bring everything to a gentle boil before reducing the heat to low.
- Once the rice is simmering, add the shrimp and the cooked sausage back to the skillet. Cover and cook for about 15-20 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit for a few minutes. Fluff the rice with a fork and garnish with fresh parsley if desired. Serve hot!
