Description

A delicious slow cooker corned beef recipe with tender meat and flavorful vegetables.


Ingredients

  • 4 pounds corned beef (flat cut preferred)
  • 2 bay leaves
  • 1 head garlic
  • 3 whole cloves
  • 10 peppercorns
  • 5 allspice berries or small pinch ground allspice
  • 1 whole onion
  • 1 large head cabbage, cut in 4 pieces
  • 8 small carrots (optional)
  • 1/3 cup sour cream
  • 1/3 cup mayo
  • 2 tablespoons cream-style horseradish, or more to taste

Instructions

  1. Most corned beef has a thick layer of fat on one side. Trim it off before cooking; cut off as much fat as you prefer.
  2. Cut the corned beef in half to fit your slow cooker if needed.
  3. Spray the slow cooker with non-stick spray if desired, then place corned beef in the slow cooker with an onion cut into quarters.
  4. Use the seasoning package that comes with the corned beef, along with additional garlic, whole cloves, bay leaves, whole peppercorns, and allspice berries. Adjust the spices to your preference.
  5. Add enough water to barely cover the meat.
  6. Cook the corned beef on low for about 5 hours, or until it’s tender enough to pierce easily with a fork.
  7. While the meat cooks, peel the carrots and cut into diagonal pieces, cutting thicker carrots in half lengthwise to ensure even cooking.
  8. Cut the cabbage into quarters, leaving the core on to help hold it together while cooking.
  9. Once the corned beef is fork-tender, add the carrots first and cook for 20-30 minutes, depending on desired firmness.
  10. Add the cabbage pieces and continue cooking for an additional 20-30 minutes.
  11. If preparing the Creamy Horseradish Sauce, whisk together sour cream, mayo, and cream-style horseradish.
  12. Serve the slow cooker corned beef hot and enjoy!
