Description
A delicious and healthy grilled sandwich filled with fresh spinach and creamy feta cheese.
Ingredients

- 2 cups fresh spinach
- 1/2 cup feta cheese, crumbled
- 4 slices sourdough or whole-grain bread
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup cherry tomatoes, sliced
- 1/4 cup Kalamata olives, sliced
- to taste salt
- to taste pepper
- butter (for grilling the bread)
Instructions
- Prepare the Filling:
- Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
- Add spinach to the pan and cook until wilted. Season with salt and pepper.
- Remove from heat and mix in the crumbled feta cheese.
- Assemble the Sandwich:
- Butter one side of each bread slice.
- Divide the spinach and feta mixture between two slices, on the unbuttered side.
- Top with cherry tomatoes and olives.
- Grill the Sandwich:
- Place the remaining bread slices on top, buttered side out.
- Heat a skillet or grill pan over medium heat. Place the sandwiches in the pan.
- Grill each side until golden brown and the cheese is slightly melted.
Notes
- For extra flavor, add a sprinkle of oregano or basil to the spinach mixture.
- Use a panini press for a perfectly pressed and crispy sandwich.
- Serve with a side of mixed greens or a small salad for a complete meal.
