Description

A delicious and healthy grilled sandwich filled with fresh spinach and creamy feta cheese.


Ingredients

Scale
  • 2 cups fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 4 slices sourdough or whole-grain bread
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup cherry tomatoes, sliced
  • 1/4 cup Kalamata olives, sliced
  • to taste salt
  • to taste pepper
  • butter (for grilling the bread)

Instructions

  1. Prepare the Filling:
    • Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
    • Add spinach to the pan and cook until wilted. Season with salt and pepper.
    • Remove from heat and mix in the crumbled feta cheese.
  2. Assemble the Sandwich:
    • Butter one side of each bread slice.
    • Divide the spinach and feta mixture between two slices, on the unbuttered side.
    • Top with cherry tomatoes and olives.
  3. Grill the Sandwich:
    • Place the remaining bread slices on top, buttered side out.
    • Heat a skillet or grill pan over medium heat. Place the sandwiches in the pan.
    • Grill each side until golden brown and the cheese is slightly melted.

Notes

  • For extra flavor, add a sprinkle of oregano or basil to the spinach mixture.
  • Use a panini press for a perfectly pressed and crispy sandwich.
  • Serve with a side of mixed greens or a small salad for a complete meal.
