- 8 small flour tortillas
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 cup sugar
- 1 cup fresh strawberries, sliced
- 1 cup strawberry pie filling
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup heavy whipping cream
- optional Drizzle of white chocolate or cream cheese icing
Instructions
- Prepare the Tortilla Shells: Preheat the oven to 375°F (190°C). Combine graham cracker crumbs and sugar in a bowl. Brush melted butter onto both sides of each tortilla. Dredge each tortilla in the graham cracker crumb mixture until fully coated. Drape the tortillas over two bars of the oven rack, baking for about 7-10 minutes until crispy. Let cool.
- Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until combined. Whip the heavy cream separately until soft peaks form, then fold it into the cream cheese mixture.
- Assemble the Tacos: Once the shells are cool, fill each one with the cheesecake filling. Top with fresh strawberry slices and strawberry pie filling. Drizzle with white chocolate or cream cheese icing if desired.

- For extra flavor, add a pinch of cinnamon to the graham cracker crumb mixture.
- Ensure the shells are fully cooled before filling to prevent the cheesecake mixture from becoming runny.
