Description

This refreshing strawberry chicken salad is perfect for a picnic!


Ingredients

  • 2 cups cooked chicken, shredded (can use rotisserie chicken)
  • 1 cup strawberries, sliced (fresh strawberries)
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Greek yogurt (can substitute with mayonnaise)
  • 2 tablespoons honey
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices whole grain bread
  • 4 leaves lettuce

Instructions

  1. In a mixing bowl, combine the shredded chicken, sliced strawberries, diced celery, and chopped red onion.
  2. In a separate bowl, mix together the Greek yogurt, honey, lemon juice, salt, and black pepper until smooth.
  3. Pour the yogurt mixture over the chicken and strawberry mixture and stir until well combined.
  4. Place a lettuce leaf on each slice of whole grain bread.
  5. Spoon the strawberry chicken salad onto the lettuce and top with another slice of bread.
  6. Cut the sandwiches in half and serve immediately or pack for a picnic.
