Description
This refreshing strawberry chicken salad is perfect for a picnic!
Ingredients

- 2 cups cooked chicken, shredded (can use rotisserie chicken)
- 1 cup strawberries, sliced (fresh strawberries)
- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup Greek yogurt (can substitute with mayonnaise)
- 2 tablespoons honey
- 1 tablespoon lemon juice (freshly squeezed)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices whole grain bread
- 4 leaves lettuce
Instructions
- In a mixing bowl, combine the shredded chicken, sliced strawberries, diced celery, and chopped red onion.
- In a separate bowl, mix together the Greek yogurt, honey, lemon juice, salt, and black pepper until smooth.
- Pour the yogurt mixture over the chicken and strawberry mixture and stir until well combined.
- Place a lettuce leaf on each slice of whole grain bread.
- Spoon the strawberry chicken salad onto the lettuce and top with another slice of bread.
- Cut the sandwiches in half and serve immediately or pack for a picnic.
Notes
- For best results, use fresh ingredients.
- This salad can be made a few hours in advance, just keep it refrigerated until ready to serve.
