Description

Indulge in this delicious Strawberry Red Velvet Cheesecake Slice that combines the rich flavors of red velvet cake with a creamy cheesecake layer topped with strawberry preserves and fresh strawberries.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • ¾ cup vegetable oil
  • ½ cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup strawberry preserves
  • Fresh strawberries, for garnish
  • Whipped cream, for garnish

Instructions

  1. Prepare the Red Velvet Cake:

Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.

In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.

Add egg, oil, buttermilk, vanilla extract, vinegar, and red food coloring. Mix until smooth.

Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely.

  2. Prepare the Cheesecake Layer:

In a large mixing bowl, beat cream cheese until creamy.

Add sugar and beat until smooth. Add eggs, one at a time, mixing well after each. Stir in vanilla extract.

Pour the cheesecake batter onto the cooled red velvet cake.

  3. Bake the Cheesecake:

Reduce oven temperature to 325°F (160°C).

Place the pan on a baking sheet and bake for 45-50 minutes, or until the center is set and the edges are lightly browned.

Let the cheesecake cool, then refrigerate for at least 4 hours or overnight.

  4. Add the Topping:

Heat the strawberry preserves in a small saucepan over low heat until smooth and pourable.

Pour the preserves over the cheesecake, spreading evenly.

Garnish with fresh strawberries and whipped cream before serving.

Notes

  • Ensure the cream cheese is at room temperature before mixing to achieve a smooth cheesecake layer.
  • Use gel food coloring for more vibrant red velvet cake.
  • For easier slicing, dip the knife in hot water and wipe it clean after each cut.
  • Let the cheesecake chill overnight for best flavor and texture.
