A deliciously sweet and crunchy treat that combines Rice Chex cereal with chocolate and strawberry flavors.

- 3 cups Rice Chex cereal
- 1 cup white chocolate chips
- 1 cup semi-sweet chocolate chips
- 1 cup strawberry cake mix or 1/3 cup freeze-dried strawberry powder
- 1/3 cup vanilla or white cake mix
- 1 1/2 cups powdered sugar (divided)
- 3 tablespoons butter (divided)
- 1 teaspoon vanilla extract
Instructions
- Divide Chex cereal into three separate bowls, about 3 cups each.
- Line three trays with parchment paper to prepare for cooling the coated cereal.
- Melt semi-sweet chocolate chips with 1 tablespoon butter in the microwave in 30-second bursts until smooth. Stir in a few drops of vanilla extract. Pour over one bowl of cereal, toss to coat, then dust with 1/2 cup powdered sugar. Spread on tray.
- Melt 1/2 cup white chocolate chips with 1 tablespoon butter. Add vanilla extract, pour over second bowl of cereal, and coat evenly. Toss with a mix of 1/4 cup powdered sugar and 1/3 cup vanilla cake mix. Spread to cool.
- Melt the remaining white chocolate chips and butter. Stir in strawberry cake mix or freeze-dried strawberry powder. Coat the third bowl of cereal and toss with 1/2 cup powdered sugar. Spread onto tray.
- Let all batches cool completely for 15–20 minutes (or chill in fridge for 10).
- Once dry, combine all coated cereal in one bowl and gently mix.
- Store in an airtight container at room temperature for up to 7 days or freeze up to 1 month.
